Libyan Mubatan

My mom is visiting us and she's been cooking up a storm. Today I decided to follow her in the kitchen with the camera and record how she makes her Libyan Mubatan.

The only problem was she didn't measure anything, so I'm going to guess at those and hope yours turn out as good as hers!


Ingredients
Peeled potatoes - 4 or 5
Oil for frying

Stuffing
Scallion -2 bunches
Parsley - 1 bunch
Ground beef - 1 lb
Salt + Pepper to taste
Garlic - 2 Tbs
Cumin - 1 Tb
Egg - 1

Outer coating
Oregano
Basil
Bread crumbs
Egg - 2
Flour - 2 Tbs
Paprika

Soak the potatoes for about 1/2 an hour. This softens them up just a bit, but more importantly, it gets rid of the dirt that is soaked in.  Peel all the potatoes.

Chop up the scallions and parsley.

Mix the greens, meat and the seasons. My mom just used her hands and got in there to mix it up. The more you can get the meat to really absorb the rest of the goodness, the better.

Set this aside and beat together all the items in the outer coating list above.

Cut the potatoes in wedges, but leave room because you'll need to cut it again, but make sure you leave the end joined together.

Stuff the middle of the potatoes with the stuffing.

Your potatoes at this point will look like little sandwiches.

Dip the potatoes in the outer coating.

Fry them up!

Then place them on a cooking sheet and stick it in a warm oven for a few minutes to soften up the outer potatoe layers.


EXTRA GOODNESS!!!
We had extra potatoes, so my mom cut them up into wedges and made french fries...which never even made it to the table because they were gobbled up.

Then, my mom had extra meat left over, so she made these meat egg combos. I have no idea what they are called but they were to die for. My kids eat them up first and asked for more!

Take three hard boiled eggs and wrap them up with the meat.

Dip them in the outer coating.


Fry them up!

Put them in the oven with the Mubatan.  Watch them disappear :)

(p.s. you'll notice that there is no photo of the completed eggs.  My kids ate them too fast!)
